This Belgian blonde is single hopped with extra aged west coast willamette hops. Unlike typical American hop usage, many Belgian breweries will age and oxidize hops intentionally, seeking the cheesy, funky, earthy, grassy flavors that typify farmhouse and lambic styles of brewing. This beer focuses on this hop aging process, with a malty, strong saison backing up the cheesy hop funk.

This was poured into a tulip. The appearance was a pale hazy orange to yellow color. A one finger white foamy head dissipated within less than a minute. The smell started off with a nice dry to sweet woodiness rolling over subtle earthy to herbal qualities and then subtle sprucy/piney aspects. Citrus does add a subtle element as well. The taste was semi-sweet with a nice bitter citrus underneath. Sprucy/piney qualities end up blending into the herbal/earthiness and leads into a semi-sweet woody aftertaste and dry earthy woody finish. On the palate, this one sat about a light to almost medium on the body with a decent sessionability despite the dry woody texture that comes about on my tongue. Overall, definitely a Hermit Thrush beer adding their take "dry woody" to "somewhat sour." Its a definitely a dry Belgian pale ale, go for it, if you’re looking for something different.

Big old cheesy hop aroma. Musty barnyard too. Intriguing.
Taste definitely follows the smell, but there's a very very slight baby diaper flash in there for just a second that brings down my taste rating from a 4 to 3.75. Baby diaper beer is a no-no for me. Loved the cheese factor in the old Willamette hops, though.
If you are uncertain about trying this beer, then I recommend drinking a 'warm up' sour/brett beer to get those taste buds primed for OLD WILL! It makes it more palatable.

Vermont brewed only locally available. Drank straight from can, has a dank funky character and is single hopped with willamette hops. Great local beer hybrid of a blonde/saison/pale ale.
