First let me preface this with my brewery experience. Great place and the bartender is extremely knowledgable. Nice guy. Shared a few brews not on the tap list. Guy really cares about the brewery and its customers.
L - pours a dark opaque orange from the growler. Slightly burnt, slightly golden. Minimal head that dissipates quickly.
S - up front is immediate Belgian funk. Not much, which I like. Doesn't go overboard with the spices. Has a more American touch to it. Then opens the spruce. Rather pronounced; fresh and cooling without being minty.
T - spruce is way more overpowering in the taste. The flavor immediately expands beyond the initial sip. Very piney, but not in the dank resiny kind of way. Rather the cool, crisp winter air kind of way. Like tramping through a forest of sapping trees after a fresh snowfall. Menthol and sweet lemongrass. The fresher you pick the spruce tips, the more lemon you get. Herbal.
F - medium body, medium carb. Nothing jumps out at me, but it does work well for this beer. Slight prickly crispness inherent to belgians.
O - Hermit Thrush is one of the upcoming breweries in Vermont. Lots of new beers and lots of small batches. This is a great variation and I hope to see more.
