Brewed and spontaneously inoculated in 2019 with wild yeast in our Vermont coolships. This barrel aged spontaneous ale is fruited with local heirloom Damson plums from Scott Farm in the barrel, and is testament to our region’s exceptional terroir. Aged 3 years in red wine barrels. Dry tannins support dark fruit character, with notes of pecan and stonefruit.
We recently began placing a few extra special, very limited products into bottles. These are smaller blends, the best of our barrels, and this bottle will age well for decades. We release fewer than one thousand bottles of each blend.

Bottled 9/30/22
My massive Hermit Thrush haul yielded only 2 bottles, Coolship Cherry and this. That one was fine but not anything amazing. This one ay least sounds a little more interesting as a concept, you see far less plum in beer than cherry. Let’s pop it open and see what it’s all about
Pours a murky reddish amber with a finger of soapy off white head that quickly fades to a thin ring and leaves minimal lacing
The nose is balanced in its tartness, its quite well rounded. I’m picking up on aromas of plum skin, tannic blackberry, baked apple, sharp oak, cherry pit, brown sugar, wet hay, cocoa powder, toasted walnut, and lemon zest
There’s more of a sharp punch to it in taste and it benefits from it. On the front end of the sip I’m tasting black cherry, plum skin, apple skin, brown sugar, dark bread, molasses, cocoa powder, sharp oak, light leather, and wet hay. The straw brings notes of plum skin, sharp oak, old leather, cherry pit, tannic blackberry, dark toast, brown sugar, wet hay, and light tobacco
A medium body pairs with moderate carbonation, resulting in a sharp beer. Finishes a tad sticky but dries out over time
This is definitely a bit better than the cherry variant. Still not their best work but definitely worth trying

Cloudy, darker amber/light brown color. Nearly no head. The remaining rim bubbles leave only a few minor spots on the glass.
Sweet aroma that reminds me of children's aspirin (fake orange). Not much sourness to the nose but the plum does come through.
The taste is far more sour than the smell suggests. It's a bit like sucking on a grape (plum?) skin. The body and carbonation are as expected. Less plum and more green apple, in my humble opinion. The finish is lip-puckering which leads to a longer aftertaste.
