Oak-Aged Saison with Peaches
Collaboration with The Rare Barrel (Berkeley, CA)
Fruit sourced from Toigo Orchards (Shippensburg, PA)
The most fruit-forward mixed culture beer we've ever released. Like biting into a peach so lush the juice runs down your hands.
This release is second in a pair of bicoastal beauties that highlight the importance of ingredient sourcing and whole fruit terroir on long-aged beer, made with our friends The Rare Barrel. Both beers began as a single batch of saison aged in wine barrels with RB's house culture, which magically coaxes out flavors that meld seamlessly with stone fruit. We divided the batch of saison in two and re-fermented each half on peak-season fruit sourced from farms on each coast.
Relative to the West Coast edition, released in May, we went full-out peach when it came time to rep the East. Whereas the first SoT release had more mixed culture character, acidity, and integrated fruit flavor, this one's in-your-face: lush, elegant and bursting with tree-ripened, fresh peach character.

Bottle from the brewery in Brooklyn. Pours opaque pale straw yellow with quickly dissipated finger of white head, smell is funky sour grass, lemon flesh, hints of peach skin/flesh, taste is white wine/Prosecco up front, funky almost bitter grass, peaks with sour peach candy and lemon soda, mellows at the end back to white wine and peach flesh warmth, feel is light and bright with nice carbonation and tartness. A funky and sour Bellini, this could be proudly served at Harry’s Bar in Venice. Yum!

Hazy, golden color. Big, white head. Some peaches, yeasts, and barnyard in the aroma. Moderately sour taste with semidry, yeasty finish. Enjoyed this one.

500ml bottle delivered from Three's. Slim pint glass @home. Month of shelving, week of fridge chill time.
Tall, frozen meringue head. Cloudy, lemon wheat-looking body.
Sour mix, talcum powder, kiwi, peach pit. Not a bold peach scent.
Tasty half sour, not quite ripe, but bold peach flavor. Lingering leafy greens bitterness, a little salt, residual yeast. Not absolutely dry. Obviously sour, but more twangy than the bottom of a long forgotten marinade. Lightly salted cracker finish.
Medium carbonation, low abv, dusty texture.
Good.
