This is a classical dark brown Belgian abbey-style beer made with a variety of malts and traditional Belgian candy sugar. It has a soured mash in order to give it a slight acidity to offset the sweetness of the malt and the sugar and has aged hops used in it which is traditional for this style of beer (it uses German organic Tettnangers from 2006 crop). The Minimus also has French oak infusion spirals in it to give it an Oaky softness that is also typical of these beers. It is served unfiltered. The name is from the latin expression "minima maxima sunt".

This tasty looking brew appears to be back for a limited time. 650 ml bottle for $8.95 CDN served well chilled into a Gouden Carolus chalice. Apparently this has been oak-aged to a small extent.

Appearance - semi transparent, coloration is somewhere between walnuts and dark honey brown. Three quarters of a finger of light tan head is poured and head retention is good leaving a thin foamy cap for a few minutes.

Smell - Dark fruits, figs and raisins predominantly with a definitely presence of candi sugar and Belgian style yeast. A touch of fusel alcohol. The nose on the whole is rather muted.

Taste - Dark fruit leads it off again, but there's a transition to nutty chocolate and a brief glimpse of candi sugar sweetness. More bitter than expected, the sweetness is just present, but quiet. Finishes with woodsy flavors. I also get molasses in a few sips as the beer warms. Herbal hops galore.

Mouthfeel - Medium-heavy bodied, carbonation is a touch low and finishes really, really dry.

Overall - A pretty damn solid Belgian style dubbel, Minimus Dubbel has impressed and will have me taking a second look for any future Mill Street Belgian classic styles (tripel, dark Belgian ale etc.). Worth a try and mostly lived up to the hefty price tag.

650mm bottle; pours a hazed copper-red ale in the glass...rich 1 finger tan cap....aroma has subtle notes of toffee, toasted malts, spice and caramel...rich silken mouth feel, rounded mellow character...flavour follows aroma, rich toasty malts, spice tones, subtle herbal hop bittering, rich but only verges on sweet....long thick wet finish accented by malts and burnt treacle...nice mellow approach to a trippel.
