One of few German ales, Kölsch is the local brew of the city of Cologne (Köln in Germany.) It is one of the palest German beers. Fermented with a special ale strain of yeast, it is fermented warmer than lagers but is then cold stored, or lagered, near freezing temperature for several weeks.
