Mixed Culture Farmhouse Ale brewed with 100% local malt and fermented in our oak foeders with our house mixed culture. Evolve was then conditioned on blackberries and rhubarb and bottled conditioned for over 12 months. This beer is light and tart, with a subtle hint of funk and pours a beautiful burgundy color.

500ml bottle served in a tulip. Pours a lovely garnet hue with a translucent clarity and no head. Nose is quite lovely - blackberries intermingled with notes of funk and lactose. Taste follows nose with a spicy bitter bite at the finish (perhaps the rhubarb). Mouthfeel is light in body with a mild, almost still carbonation and a light, pucker astringency. Overall, pleasant and interesting. A nice wild from TB.
