Not exactly double the strength of standard pale ale, nor was it fermented twice, or used double the malt in the making of the beer- there's not anything to suggest that this "double pale ale" is two-times anything but it is a scaled up version of the standard pale ale with amplified flavor while keeping the balance of America's microbrewed darling in check.
Ethereal's Do Over Double Pale is strikingly bright peach in color with glimmers of orange and copper. Shedding a creamy white froth, the stronger than normal aromas are balanced with caramelized malt and classic pacific northwest hops with its bright grapefruit, orange and tropical perfume. To taste, the malts are dense and doughy with toasted pound cake, light cashew, caramel and honey.
Fuller in body also, the juicy malt center becomes the catalyst to bring out greater ester action with apricot, mango, marmalade and peach to accessorize the hop flavors of pink grapefruit and freshly zested orange. Though the hops trend bitter to balance, their pine and grass flavors stop shy, allowing the taste to trend malty late in the taste.
Retaining its firm and cakey texture, the pale ale finishes with a sweet tooth as the hope continue to loose traction as their bitter resins remain too timid for proper balance or dryness, and therefore relegating the taste to that of a bigger amber ale. Caramel and spruce round out the finish with a gin-like spice and a steady aftertaste of citrus and graham cracker.
