Caught somewhere between a dark saison and a sour dubbel, it seems that Ethereal brewers are as clever when coming up with new beer recipes as they are at making up names.
The Somnambulist pours russet brown with a host of rusty reds and brown as slim light pierces through the center. Dark, stone fruits full the nose with hints of tartness, toast and cider. Hard candy and steely caramels glaze the tongue as its malt influence is felt.
As the layers of flavors unfold on the middle palate, the beer rapidly sheds its early sweetness and takes on the taste of roasted peanuts ahead of the tangy and piquant sourness of dried cherry, date, raisin, plum and red berries offer their balancing acidity. Toasty and peppery in finish, the final flavors are of sour red grape and red apple cider.
Medium-light in body, the beer's true saison character shows- dry, spice-forward and properly supported with fruit. Pushing the acidity slightly to the sour side allows for the challenge that gets dubbel fans out of their comfort zone but delights the sour ale fans with its friendly acidic embrance.
