If the Belgians can sour a brown ale, then so can a Kentuckian. The Ethereal version trends sharply sour and toasty with the tethers of a standard American brown ale for a taste that's both comfortable and curious.
Its bright and limey scent skates along a russet brown body with tawny golden edges. Its light creme foam swirls to fuel the nose with complementary citrus, brine, tropical and dark fruit. To taste, the remnants of malt sweetness applies a steely caramel, cola and nutty flavor on the front of the tongue.
As the ale makes its way across the palate, it sheds its sweetness and trends toasty, coffee-like and of faint cacao. The sourness from fermentation soon washes the middle palate with green apple, lemon, lime, cherry, gooseberry and redcurrant before trailing with a bitter and sour combination that's vinous, cidery, grapefruit-like and sprucy.
Medium bodied and toasty dry, the beer's moderate creaminess to start finishes sharply of acidity, arid woodsiness and a light peppery warmth. A short afterglow of weathered woods and burlap have the tastebuds wanting miso soup in complement.
