Unlikely to receive any cease and desist notices anytime soon, a wild taste comes just as wild as its name with the introductory beer that celebrates both isolation and terroir specificity with uniqueness of charm and a rustic sense of place.
Allopatric Project #1 pours a ruddy mauve hue and cast in a fine mesh haze. As a trickle of froth dissolves away, the scent of vinous fruit, berry and citrus line the nose along with a pack drop of tartness, earth and yeast spice. Opening with a moderate sweetness of hard candy, fruit juice and a light candied sense of taffy, the malt influence is sweet but light.
As the sweetness begins to lift, the tandem of earth and sourness evolve into a bold taste of rosé wine and white pepper. Weathered woods and light leather link up with a piquant sourness of cranberry, redcurrant and green apple for a fruit forward taste of sangria. Lemon, lime, orange and grape keep seem all of the dried and slightly under ripened variety keep the complexity coming late on the palate.
Medium bodied for sour ale but light compared to most other styles, the beer looses its carbonation early to allow for a slightly flat taste of cherry cola to sit on the tongue. But its playful acidity and friendly pepper notes tighten its taste and ensures a fresh, clean and crisp finish with a linger of blush wine in aftertaste.
