Cherry, oak and sourness. The masterful team of Ethereal brewers embark on a sour ale that borrows several techniques of flanders red ale but in a sharper and more acetic form.
Aged in oak puncheons and on a generous portion of cherries, the dark ruby, rusty brown Allopatric Project #2 sheds its dainty froth before teasing the nose with red wine, cherry, a funk filled earthy mustiness and a twinge of peppery spice. Light sweetness greets the tongue with hard candy and a light creamy texture.
Any malt display is quickly forgotten as the ale washes the middle palate in sourness. Black cherry offers a burst of juiciness and its own tanginess before elements of dry cider, tannic red wines, cranberry, redcurrant and lime begin to latch onto the tastebuds. Trending mildly bitter but bracingly tart, the strong acidity is accompanied with nutty oak, toast and a sharp peppercorn finish.
Medium light in body, the fairly alcoholic sour ale is warm in its finish with a hint of peppery solvents that weave in and out of the red wine character. Cherry flavors persist in a medium length aftertaste with a slight medicinal flavor and feel.
