Always looking for a new opportunity to raise the bar on Belgian styles, Ethereal set their sights on the granddaddy Belgian beer, the Strong Dark Ale. Bourbon barrel aging and a healthy dose of coffee should do just the trick.
Pouring a dark Porter-like brown, Crocotta immediately begins to amass a dense ecru blanket of foam. Dancing boldly above are the strong coffee, candy and whisky aromas in a tantalizing and curious display. Sweeter on the tongue, the flavors begin malty rich with hard candy, sorghum, honey and cola.
Full flavored and continuing to wash the middle palate with sweetness, grander notions of brown sugar and caramel lead into the more robust taste of coffee and cocoa to take the richer malts in an Americano direction. Stone fruit flavors of date, raisin, grape, plum and prune pull from the coffee and await the natural spices of peppercorn, chicory, sarsaparilla and allspice for a bitter, tannin-heavy and boozy taste late on the palate.
Equally as full in body, the beer's rich malt complexes carry a weight that makes the beer a slow sipping affair, much akin to barleywine. A bittersweet finish is spicy from all the phenol, coffee and barrel directions. Heated with spiced rum, the lightly fusel finish lingers long and woodsy in its aftertaste.
