Breaking free of the haze, brewers have another option on their hands than to revert back to the taste of West Coast IPA, pushing forward, Ethereal embraces the Brut IPA for a dry, racy and fruit-centric taste without giving in to either the pastry or the pine.
Fast Track races out to a slightly hazy golden pour, crowning with a loose white cap. Its tangy, grassy and earthy scent is remiss of citronella, fresh herbal greeness and a brisk hint of hay. A mild sweetness is slighlty more hefty than pilsner but shying away from caramel or cereal.
Its low lying sweetness becomes lower as the hop flavor greets the middle palate with white grapefruit, under ripened oranges, lemon and apple. Light and green fruits play out heavy through the hops and esters while its void of balance allows the peppery hops to tighten the taste late with fresh spruce, straw and lemon pepper.
Medium light on the palate, the beer's bold carbonation is shy of the "brut" promises and its dryness in solid but not what's advertised by the style. With its mild bitterness, Fast Track seems to be light a bolder version of session IPA, equipped with a mild mineral, seltzer-like, medium short aftertaste.
