Taking wild ale a little closer to Gose sour ale, a tart, lemony and refreshing taste is all Ethereal Brewing, but a little something else as well.
Cloudy gold and swirling with a light and whisping froth, Dreamcatcher Tattoo teases the senses with a tart citrus scent, light wafer, mild sourdough and an earthen cellar-like note. A soft sweetness of whole wheat, honey and agave dance on the early palate with a whimsical maltiness.
The fruit flavors expound upon the middle palate, leading with lemon, green apple, white grape, lime, grapefruit and gooseberry. Dominant with citrus, the beer develops an earthy bitterness that's laced with citrus peels, fresh grassiness, and an herbal green tea, sassafras and lemon grass finish.
Finishing light, crisp and highly refreshing, the beer is moderately sour and lighlty bitter with its more earthen woodsiness playing a part in the beer's "wild" Gose character. A medium short aftertaste is dusty, weathered with oak and bright with muddled citrus zest.
