Teaming up with a Lexington local cider maker, the Ethereal team employs the rot of wine from WiseBird into a distinctive wild ale for a beer of freshness, funk, fauna and spice.
Pouring a ruddy rose color, the faintly hazy wine-centric Parliament of Owls builds a loose, slight rose stained froth. Juicy with rosé wine grapes and with a candied hint of Kool-aid, the scent balances with a strong vinous peppery twinge and a brisk cellar-like pungency. Its easy going sweetness greets the palate with the lightness of taffy, juice and wafer.
As the middle palate unfolds, the sweetness turns to vinous dryness and the spiciness quickly overtakes the session with fresh cracked peppercorn, hay, white pepper, grapeseed and a synthetic twinge. Trending strongly of wine, the late palate brings a more intense taste of fresh vinyl, medicinal spice and a strong phenol balance.
Medium light in body, the beer wants to be a drier, more sour version of wine spritzer, but its strong fermentation spice, oak and musty wine rot character keeps it aligned with phenol-heavy haphazard ale.
