Easy drinking doesn't have to mean light or lacking complexity. Ethereal puts together a rather classic Mild Ale but does the a-classical additions of oak, coffee and chicory to keep the tastebuds entertained.
Expectedly dark in brown and garnet, Papa Legba kicks of with a dainty creme-like froth. A mild mannered but dark spice scent of earth, coffee, char and cola floats on the rim to draw in the senses. Sweeter to start, its a toasted caramel taste that hints toward toffee, cola and sarsaparilla with an almost root beer character.
As the coffee and chicory awakens on the middle palate, a nearly rye-like grit scampers across the tastebuds. Toasty, light char and a soilish earth character starts to supplant the sweetness as a broad and woodsy hop bitterness balances the lingering sweetness and leans on the spices particularly well.
Hints of chocolate come late as the finish is medium long with the nuttiness of oak keeping the cola flavors alive. A medium long aftertaste leaves tracks of wood, cola and pepper behind.
