Coming out of winter, everyone is yearning for a little more sunshine in their life. Ethereal Brewing teams up with Dreaming Creek for a slice of sunshine for each and every tastebud.
Lightly cloudy and cast in a pale straw and chrome color scheme, an initial rise of foam delivers a tantalizing perfume of citrus, cider, wine and an undertow of fresh sourdough. As its scant sweetness skips across the early palate, suggestions of wafer, sourdough and dry crackers come to mind.
Ample carbonation, racy acidity and bright fruits cut through the remnants of malt quickly to allow a quick avenue for crispness, cleanliness and refreshment as the undercurrent of lime, lemon, green apple, white grape and gooseberry carry its own Northern German sourness, but the additions of tangerine and grapefruit only elevate the fruitiness without creating any weight or unnecessary heft. A lightly bittered late palate is accompanied by the rounded salinity of the gose-styled ale that highlights the fruits and keeps the session brisk but balanced.
Light, crisp and refreshing from sip to finish, the beer carries a brief aftertaste of sourdough that's a welcome balance to the taste of citrus peel and vinous acidity that carries on, if ever so fleeting.
