The allure of the forbidden fruity was simply too much for Adam to withstand and so we are all now damned to hell. But just when we think that we as a society have pulled ourselves into salvation, Ethereal Brewing goes and does the same. Drinking from the grapefruit well will take some time to overcome.
Arriving at the bar with a cloudy golden-straw appearance, It Is Forbidden floats a pillowy white cap while hosting a collection of citrus, tropical, stone and orchard fruit that leads with those obvious grapefruit additions. Sweeter and creamier on the initial palate, suggestions of angel food cake, pastry and agave all come to mind.
As the hazy ale loosens its structure, the bubbled break apart the sweetness and the hops rush in. Filling the void with tangerine, mango, pineapple, lime and apricot, the beer awaits a stronger wrap from pink grapefruit to carry the fruity load into a strong citrusy direction. Trending crisp and smoothly bitter, the late palate comes with pine, citrus peel, hemp and fresh-cut grass for a little extra bite.
Medium bodied and lightened by the citrus oils and acids, the nearly tangy ale finishes on the drier side of malty-dry and with a more bitter than sweet impression on the finish.
