DDH Once the Sun Goes Down IPA is fermented cool with our favorite kolsch strain and features Denali and Vic Secret. Unlike our house ale yeast, this kolsch strain lends a cleaner/sharper profile that really allows the hop character of the beer to shine.
Notes of resiny pine and subtle pineapple fade to a clean crisp minerality reminiscent of kolschbier.

16 ounce can poured into a willi becher.
Cloudy and translucent, the pale straw pour finishes with an inch of white rocky foam that lasts a while and leaves a little bit of slick lace. The aroma is fairly strong and pungently hop forward with a mango-like character. Flavor starts resinous and a bit tropical, kind of an artificial plastic pineapple/mango, before finishing mostly clean and bitter. I say mostly clean because it has some prickle as well. The body is light-medium with good carbonation that gives it a crisp bite to start that fades to slight frothiness.
