Bottle 0.75 L.
Dark golden body, with a small, fizzy, white head, mostly diminishing with virtually no lacing; low density of medium-sized bubbles.
Light malty and hoppy aroma with spicy notes related to alcohol; maybe some hints of honey.
Sweet flavour with some bitter notes.
Light-to-medium body with a watery texture; flat carbonation; evident alcoholic warming in the finish.

A: The beer is hazy brownish yellow in color and has some hues of amber along with a slight amount of visible carbonation. It poured with a quarter finger high off white head that died down but never completely faded away, leaving a thin layer of bubbles covering the surface and a collar consisting of large bubbles around the edge of the glass.
S: Light to moderate aromas of apples are present in the nose along with hints of caramel malts.
T: Like the smell, the taste has flavors of apple cider along with notes of caramel malts and hints of earthy yeast. A slight amount of bitterness is perceptible.
M: It feels a bit shy of being medium-bodied on the palate and has a moderate amount of carbonation.
O: I liked this bière de garde because it was fruity and not too malty, which made it easy to drink. It made for a nice accompaniment to my dinner.

Aroma is strong, vinegary, apples, wine, sweet, cider. Appearance is light amber with very short silky head. Taste is apple cider (brut), malt, honey. Mouthfeel feels watery, palate is is very light. Rather disappointed in this tripel. * Note I think this bottle is bad. It foamed when I opened it, and a previous tick on Beer Advocate I had rated this a 4... will try another.

25cl bottle, poured into goblet.
Pours a dense white 2 finger head, settles to a thin foam after a few minutes and leaves some lacing. Clear blond / amber liquid.
Aroma of plums and alcohol, like a dopplebock or a quad.
Rich and malty as the name suggests. A bit of cheerios toastiness and some honey notes as well. There is a balanced bitterness, rather strong for a French beer. Dry finish with a bit of hop bitterness.
Feels viscous like stronger pale ales, carbonation fairly strong.
Very drinkable. One of the best widely available French blonds.

Sorry but this following comment is in french :
A : bière de garde blond doré, limpide. Mousse blanche, abondante et persistante
S : malté
T & M : attaque ample et généreuse, elle développe des arômes fruités, avec une légére pointe d'agrumes. Bel équilibre entre la finesse et la puissance d'alcool
D : une nouvelle bière de la gamme Castelain
