Some details first, as this is a little unusual, at least for me. First, to quote the maker's website: "The beer is a style of beer typical of the north of France, which consists in keeping the beer in 'guard' tanks or in barrels for several months before bottling it. This allows a second fermentation of sugars and yeasts which makes it possible to reveal new flavors." I had it on tap in Paris, so I haven't seen the bottle, and the brewer was inferred from google searches as strangely the website for the beer itself doesn't say who brews it.
L: golden, slightly cloudy, typical of a farmhouse ale.
S: yeasty, malty, a touch of citrus.
T: complex. Both quite sweet and quite sour. Pear drops, sour apples, but also biscuity, yeasty and malty.
F: small, dense bubbles. It seemed to reward small sips.
O: a really satisfying, complex beer. I didn't want more than one, but that one took a while to finish because it demanded attention. My expectations for a random beer on tap in a not very expensive place weren't high, and they were definitely vastly exceeded.
