YEASTIE BOYS. Wild Barrels Project No. 6 is a mixed culture barrel-aged American Saison. Our Saison base was fermented in a virgin White Missouri Oak Foeder with Yeast Isolate foraged from Dunbar Garden and mixed cultures foraged from local backyards. Dry hopped with Crystal hops before bottling.

Pours an effervescent gold/honey with a thumb of eggshell colored head. Very good lacing & good head retention
S: Pears, wet hay, both fade after a while
T: Follows the nose, a little pineapple as well, a little dryness from the oak & some white grape up front. White grape, pineapple, & oaky dryness dominate as this warms, a little pear as well, a touch of acidity as well. Finishes dry with a bit of grapefruit, pineapple & white grape
MF: Medium body, firm carbonation
Drinkable enough, interesting, solid, but not a stellar example of the style by any means

Reminiscent of some of the sour saisons produced by Prairie. Be careful of the sediment in the bottle. This one grows on you. 3.75

This is a mixed cultured Saison, with locally isolated yeast and bacteria. Barrel aged in oak foeder's and dry hopped.
A: Pours from the tap at the brewery a pale orange/yellow color, that is nearly clear. A two finger white head forms with good retention and spotty lace.
S: Very fruity up front. Peach and pineapple is most prevalent. Peppery spice, a touch soapy in the nose as well.
T: Follows the nose at first. The fruity hops are up front with peaches and pineapple apparent again. A touch bitter, a touch soapy. Then as this warms more yeast comes out with a light acidic tartness, that brings some lemon rind out as well. Just a touch of oak and vanilla. Everything is very subtle here, but makes this deceptively complex.
M/O: A medium body with crisp and effervescent carbonation. This finishes bone dry, and I get this light soapiness throughout. Still, easy and enjoyable to drink. I will be looking forward to opening my bottle.
I do get a persistent but light soapiness throughout. Which is something I am not usually a fan of, though it is very light here. Just enough of a presents to note. I also wish a bit more yeast notes would shine (maybe that will come out more with some age), but I do like the fruity hops and how subtle this is. Overall, a very good attempt at an American Saison.
