There is something inconceivable about this IPA. How can 12 months of aging in our oak foeder make an already delicious IPA even better? We employ the solera method in which this beer was fractionally blended with our previous foeder release. Refermentation with wild yeast, Brettanomyces, which demands time, dormancy and complex sugars with which to work its magic adds a layers of flavour that can’t be rushed. You can expect an IPA that is deceptively light, bright and bursting with citrus notes.

SPECIAL INGREDIENTS -1 year in our oak foeder , SIGNATURE HOPS - Simcoe, El Dorado, Mosaic ,
MICROBE STRAINS - Brettanomyces refermented

Category 12 Brewing 'Irrational IPA' @ 8.2% , served from a couple of 473 ml can's
A-pour is a dark gold from the can to a clear dark gold in the glass with a small size off-white head , dissipating into a minimal lace ring along the tulip/Spiegelau , last pour is hazy dark gold
S-intense aroma of citrus & pine from this oak aged foeder west coast IPA
T-complex , juicy , layer upon layer of flavour , almost sweet swallow
MF-ok carbonation , feels full bodied , so drinkable
Ov-this beer has a wow factor thru-out
