"The Devil To Pay" is our New England Style IPA hopped with copious amounts of Simcoe, Citra, Azacca.

Man do I love Phantom Carriage's berliner weisse and wild ales, but the ipas have been a bit lacking comparatively, so we go into this not with the highest of expectations. Pours a hazy yellow with 1/3" white head. Aroma actually gives a different nose, even if only slightly, than most beers, the combo of citra and azacca make for a little bit earthier citrus nose, like you can get the wood and dirt as well as the orange rind.
Taste is a soft, low bitterness mild citrus excursion. It isn't bursting with hop aroma or flavor, but it isn't completely devoid of it either. Everything is soft, the bitterness, the carbonation, the tropical and citrus fruit notes, nothing in the tree vernacular going on here. Its actually one of the more approachable new ipas I've had in a long time. Soft mouth feel, soft malt body, never heavy or sticky.
Its a nice beer but it isn't going to blow the doors off any hopheads. Fits into the "nice" category. Good use of Azacca hop here.
