Brewed as a part of our Incubation Series, Bootleg Boulardii has a light malt base with low bitterness. It was fermented with Bootleg Biology's Saccharomyces cerevisiae boulardii, an interesting yeast strain isolated from Chardonnay grapes in Pasco, WA. The beer was then dry-hopped with Mosaic and Sorachi Ace, creating an extremely drinkable beer with a complex aroma profile rich in lemon oils, ripe mango, and citrus blossoms.
