We took our richly layered white stout and rested a portion of the batch in freshly emptied bourbon barrels. With all the deep chocolate, coffee, and light nutty character as before, but now enhanced with rich brown sugar notes, amaretto cherry, and freshly split vanilla bean flavors.

Poured into a Fremont small snifter. Pours a slightly hazy, medium golden orange with lots of small floating particles and a one finger white head with great retention and solid lacing. Aroma of dry caramel malt, coffee, mild cocoa, vanilla, bourbon and a hint of orange citrus. Flavor is lightly caramel malt, coffee, bourbon, vanilla, mild cocoa, light stone fruit and some woody oak. Medium bodied with light to moderate creaminess. An interesting, offbeat strong ale, reminiscent of a cross between a non-hopped American barleywine and an imperial golden ale and/or a wheatwine. I'm not getting a stout vibe from this, with not toasted malt and minimal chocolate. The white stout style is an odd concept in my experience. While not that stoutish, it is an interesting and flavorful big ale, with good light fruit notes, vanilla, hints of cocoa and solid bourbon barrel character of booze and oak. Coffee is a clear note at the start of the sip, giving way to the vanilla and fruit flavors. In a blind tasting, I'd probably have guessed this was a wheatwine, and a well made one. I'm a big fan of that style, so no matter what its name is, I liked this one.
