Initially, I left the yeast in the bottle and poured a clear, light copper to amber beer. Tiny carbonation randomly forms and races upwards to reinforce one and a half inches of tight almond foam. The head is long lasting, ultimately leaving a dense coating of lace on a PBGC Crispy Boi tulip glass. (SRM 9-11).
A mild Farmhouse funk leans towards horse blanket. Fermenting orchard fruit follows, while faint toast and sweet malt form a backdrop. Herbal qualities are also present with a hint of allspice.
The flavor opens with floral tartness in relative balance with sweetness. Earthy qualities are quite high. Bitterness arrives late, followed by sour apple. A long, tart finish has bitter highlights. Warmth presents cashews and Brazil nuts.
A medium to light body with a soft satin texture. Fizzy carbonation leads to surprisingly high alcohol, although there is no heat. The finish is very dry.
Aside from the tartness, this is what I expect from a Biere de Garde. I enjoyed this while relaxing and imagine it would go well with light conversation.
