No Sleep Til Bardstown is a barrel-aged imperial stout that we brewed in collaboration with Binny’s Beverage Depot. This full bodied beer has rich bourbon flavors with earthy chocolate notes making this stout a well rounded, smooth finishing beer. Aged in Ezra Brooks barrels from Rux Low down in Bardstown that were handpicked by the Binny’s team.
Softer and more rounded on the finish, the addition of vanilla not only amps up the vanilla notes imparted by the oak, but also adds a touch of perceived sweetness to the finish. The end result is an imperial stout that’s dessert like, without being overly sweet.

16 ounce can into a tulip snifter. Had 1/12/23.
Pours near black and opaque, with a half inch foamy head and a little tight, foamy lacing. Aromas of roasted malt, vanilla, chocolate, some oak, light bourbon. Flavors of bourbon, vanilla, malt, oak, chocolate. Smooth, a very good lighter full body, appropriately carbonated.
Fairly straightforward, but good. The barrels and vanilla stand out and while it has a little bit of a lighter feel, the base is pretty strong.

Enjoying the vanilla variant. Not much difference between the two other than the vanilla which is not overpowering.

picked up as a mixed 2pk frombinny’s. poured from a 16oz can into a snifter. pours a cola brown out of the can but gathers in the glass nearly black with a massive sandy brown head that recedes with time but never fully goes away. bourbon, tobacco, oak, coconut and vanilla on the nose. taste follows and where the non-adjunct can had an ashy, cigar flavor this vanilla variant has sweet chocolate cake with frosting and even hints of coconut. i feel like this beer needed an adjunct and too and this can proves it. it has a medium-full mouthfeel. a little creamier from the vanilla and thus, perhaps a touch fuller than it’s counterpart can. fun mixed 2pk and definitely enjoyed this variant more than the non-adjunct can.
