22oz bottle. Poured out a dark brown color with a small, tan head of foam. It smelled of dried dark fruit, roasted malt and some pepper spices. Malty with dark cherry taste and a subtle chilie heat.

Bomber bottle, I see no freshness info/bottling date

Pours a nice rich looking shade of mahogany, moderate dark khaki cap, and leave more then ample fine sheets of lace.

Dark sugars and malt on the nose, my challenged sniffer does not pick up any pepper notes.

On the palate, its more dark malts and sugars and an subtle, back of the throat and darn mild child note.

Smooth, delicious and dangerously drinkable at over 10%....well worth a try

Pours a clear brown with a finger of khaki head. Good head retention with no lacing left behind. Aroma is dark fruit, plum, oak, Belgian yeast, and hot chilies. Flavor profile follows the same lines, hittings notes of dark fruit, plum, chilies, oak, and light Belgian yeast. Mouth feel is velvety, smooth and creamy giving a large and filling presence. Overall, a fantastic quadruple ale. It carries the quintessential sweet characteristics of a quadruple ale without being overly sweet, and then balanced out by a slight twinge of chili pepper spice in the back end.

Served in a 12oz snifter. Draft. Reviewed from notes.

a bourbon barrel aged quad with guajillo chili peppers in it! deep chestnut in color, shiny, without a ton of head, long legs on the edges of the glass. light smoke in the aroma, lots of corny sweet bourbon, molasses and brown sugar notes from the malt, and vanilla and oak all over it. i dont smell much of the pepper, maybe a slight sort of fire roasted element, but its not hot at all, dried and mellow to me. the flavor is great, and there are some peppers here, mild for sure, lightly sweet and burnt at the same time, no heat at all, a nice subtle accent flavor like sea salt might be on a chocolate bar. i dont get as much belgian yeast to this as expected for a quad, its mild spice and dark fruit, nice with the malt but not super robust. the grain base is true to the quad style with rich sugary layers, currant and prune, maple and honey, fig and date, light red wine, oak tannins, and whiskey leading into a long sweet boozy thick finish. it has the mouthfeel of cognac, mellow and almost still, but also rich and slow. really clever stuff here from these guys. all of their barrel aged beers i have had so far have been outstanding. not sure i have seen a quad with peppers before. they were really nicely integrated here. i would love to try the tequila barrel aged edition!
