a beer of completely unlimited drinkability, a gorgeous rustic pils, perfect in the right areas, dry, bubbly, interesting on the grain side, and clean on the ferment, they really did nail this. my first beer from these guys is a total winner. ever so slightly hazy from the tap under two inches of expansive white foam and lots of visible carbonation. the head lasts, leaves ring lace, and tickles my nostrils when i go to smell it. dry dusty european pils malt, but somehow fresher than i am used to, not as substantial either, it seems immediately delicate. maybe some raw or white wheat in here, its almost minimalist, but sometimes less is more, and thats definitely the case here when i taste this one. the grain is crackery and clean, only loosely german, the yeast profile is also quite subtle, which leaves the mineral profile of the water there, making this amazingly crisp. the hops are noble type, soft grassy or tea spice and faint citrus, all in very good balance, but each element can truly be appreciated here both by themselves and together as a whole. the whole thing is really bright and alive, it drinks nice as a patio type beer, but i think also has enough nuance and character to be an all season session lager. i like the tip of the cap to the old world, the refinement without giving it a lobotomy, and the layers of flavor it has for how light it is. i think its shocking these guys arent more widely talked about. i only had two beers in here, maybe i ordered well, but both of them were exceptionally good and quite distinctive. this is a killer pils!
