Our BIG imperial maple stout was laid to rest in a pair of 5 year Applejack casks from our good friends at Apple Country Spirits.
Brewed in summer of 2020, this iteration of BIG rested in oak for 16 months before being transferred to stainless to lager before package.
We get waves of cinnamon, candy apples from the fair, and that nostalgic maple reminiscent of your family's favorite southern tier pancake house (you know the one i'm talking about).

This one pours a very dark black color, with a very small head, and not much lacing.
This smells fantastic - like a spiced caramel apple, with vanilla, milk chocolate, earthy maple coffee, and lots of oak.
The applejack barrels a pretty spot and complementary flavor profile for the big sweet and maple heavy base stout. The maple is sweet, but not too sweet - it's got a nice earthy quality, without too much residual sugar there. There's some oak and vanilla, and just a killer spiced apple flavor, with hints of caramel and cinnamon, maybe. There's lots of dark chocolate too.
This is pretty thick and creamy, with very little boozines. These beers are so heavily alcoholic, but you can never really tell that they are, which is always impressive.
