In January of 2020 we brewed a new rendition of our anniversary barrel aged maple stout, amped up the maple and sweetness a touch, and our 'BIG' barrel aged imperial stout was born.

We picked a single 10 month bourbon cask of our first batch of imperial stout named 'BIG' and transferred it to another former bourbon cask that we had used to age maple syrup for an additional 11 months. After just over 21 months on oak, we moved it to stainless to allow the beer to lager and round out.

We get huge impressions of maple fudge, dark chocolate, warming bourbon, and old saturated oak.

On tap at Swiftwater Brewing Company in Rochester, NY.

This one pours a very dark black color, with a small head, and no lacing.

This smells pretty intensely oak, with dark fruit, cookie dough, bittersweet maple, vanilla, and milk chocolate.

This series of stouts keeps getting better and better, really. This is probably the most barrel forward entry in the series, with tons of oak and some barrel vanillin. There's lots of milk chocolate too, some spiced bitterness, as well as some cookie dough like characteristics.

This is medium bodied, slightly boozy, but pretty drinkable all things considered.

I pretty much always have to try new variants on this series when they are released - they are some of our best local stouts.
