Once the West Coast brewers finally got a wrangle on those pecurious hops that they grow, their IPA grew like wildfire. Eventually reaching the banks of Central Florida and Mad Beach's 90's styled West Coast IPA is a welcomed addition in their West Coast (of Florida, that is).
Strikingly clear gold, Cabrillo builds a lofty cotton froth and with the classic citrusy, herbal, and piney scent that made us all hop heads. Scantly sweet in its upstart, the session starts with a dry cracker-like taste with wafer, a hint of honey and light bread.
Not to be outdone, a quick rise of hops dominate the fledgling malt impact for a middle palate that's sharp with fresh oranges, pink grapefruit and a pep of lemon. Then a quick turn to bitterness shares bolder suggestions of spruce, fresh grass clippings and peppery resins in a throat gripping might that true hop lovers like best.
Medium bodied and finishing with a light curacao vapor, the IPA approaches imperial status for session with extra kick and elevated spice that highlights the bitterness and heightens the beer's dryness, refreshment and drinkability. A long aftertaste of clean bitterness is just what the West Coast ordered.
