The Carignan grapes came from Lionel Maurel from Mas d'Agalis in the south of France who works exclusively with organic grapes. 200kg of Carignan grapes were placed in a 400 liter barrel with lambic from the 2012-2013 brewing season.

Dusty red murky appearance, soft bubbly modest white head, decent retention. Grape, oak, dusty funk, soft tartness. Moderate to light body, medium carbonation.

This vintage is incredibly different from the 2015 where the grapes came from Austria instead of France (supposedly). Ruby raspberry color. White head.
The nose is spectacular. The grapes are so incredibly soft and juicy. Notes of wine without the tannins. Very minimal oak and funk shine through in the nose.
Taste is near perfect. I don't know what more I could want. Juicy, soft grapes. A nice amount of sour and funk comes through. Light cobweb/basement musk. Light acidic lemon citrus notes. Oaky.
Light bodied. The right amount of carbonation. So soft and delicate.
This beer exceeded my expectations and then some. I didn't expect much after having the 2015 version with Austrian grapes, but the grapes from France are where it's at. One of my favorite cantillons to date. Wow.
