Bottle at Cantillon, November 2018.
Served alongside St. Lamvinus and Lambic d’Aunis (for research purposes, of course).
This beer was my favorite of the trio. So much character in one lambic. Grape skin, earth, funk, mild sweetness, medium acid. Much more vinous and assertive than St. Lamvinus. What a gem!

A more tart grape sour, with supporting tart fruits like black currants, black berry, and raspberry. Has an apple vinegar middle note followed by hay and funky yeast on the finish. Very smooth with moderate tart and acidic bite. Lots of carbonation and brightness on the body to with lush smoothness.

Pours a foggy burgundy with a finger of khaki-pink foam on top. Aroma is cherry, bread, and grapes. Flavor profile is red grape, cherry, and bread. Mouth feel is medium-thick with a light velvety texture. Overall, a fairly robust beer for a lambic, but still well controlled. Beautifully dynamic.

Bottled 18 October 2017. Consumed 8/2018.
Pink head. Ruby red color.
Red grapes and tannins. Oaky. Wine like but not like the cinsault I just had. No manure funk like the 2014 or 2016. Very similar to 2015.
12/18 Revisiting: Dark raspberry ruby color. Light pink head.
Nose is all manure and barnyard funk. Taste brings out the grapes, but still so much of the manure funk that Cantillon grapes sometimes bring out. A bit of tannins and citrus. A very enjoyable vintage that reminds me of the 2014.
