Thanks endlessly to a best friend that brought this out and shared this. A great beer to enjoy surrounded by friends I have known for many decades combined.
A- 750ml pours a pale amber-pink brew with a big fluffy white cap rising up to several inches high with great retention. Eventually that dies off and a small ring around the edges leaves both webs and spots of lacing.
S- You almost know right away this is a Cantillon as the aroma is ripe with the lambic flora. Overall it is just a supreme blend of fruit, sourness and funk from the yeast/bacteria. Raw sulfury young lambic, musty old grapes, aged oak, lactic lemony sourness, vinous, raspberry and rhubary popsicle notes. Wonderful smell.
T- Just like on the nose the beer is woven together by the Cantillon flora which serves as a perfect base for the fruits added. The raspberry becomes more prominent on the taste buds and so does the rhubarb pushing some of that lambic funk to the wayside. Just more fruity in general here. Musty oak barrels, vinous fruits, horse funk, hay, lemon, lactic acid sourness and a small hint of tannins.
MF- A light bodied brew with a slick acidic and foamy texture. The carbonation is nice and high pushing those fruit flavors to the brim. In the end very sour.
Fantastic depth to both the lambic and fruit flavors in this brew which isn't surprising when you have Cantillon on the label. A perfectly appropriate beer for the occasion and a fantastic lambic overall.
