Cantillon Racine sur Lie is a 2 year old Lambic blended with Chardonnay, Tokay, and Sauvignon Blanc grape pomace. It was created in collaboration with Radikon, a winery in Oslavia, Italy.
For the Racine sur Lie, 5 liters of fine lees were added to a single barrel of the lambic that was maturing as Racine. It was bottled without any additional blending.

Pale yellow appearance with a scant white head receding quickly to a lingering surface film and collar. Grape skin, wine, sourdough. Dry, moderate body and carbonation. Refreshing.

Bottle pour. Golden color with white head. Fruity and wine like. Melon, tangerine citrus, stronefruit, White wine and grapes. Very refreshing and complex. Would like to do this and the regular side by side in a few years.
