Sator is a mixed fermentation sour beer and part of the Sator Square Series. Using three unique yet complimentary wild ales, the resulting blend or 'cuvée', has been aged in Pinot Noir barrels for six months, before being dry-hopped with New Zealand's "The Bruce". Hand bottled in summer 2021, the beer then underwent the final stages of conditioning to bring it to life. Released the summer of 2022.

Copenhagen 26/1 2023. 37,5 cl heavy glass bottle from Mad & Vin, Magasin, Kbh. K. A round weird, golden plaque own a green-is background on the label.
Pours opaque, murky golden amber with a small white head. Settles as thin patch of foam hanging on to the side of the glass for dear life.
Aroma is fairly intense with tart and a bit searing scent of unripe berries with a touch of funk. Sour gooseberries, citrus anf grapes. Sour cheese and barnyard.
Medium strong carbonation. Slightly thick, oily, lively, and tingling texture.
Flavor is medium intense with a medium strong sweetness followed by a stronger tart sourness. Aftertaste is sour and lingers for a bit. Finish is quite dry.
Fine sour and funky specimen.
