This is an American strong ale, with a big portion of wheat in its grain bill, and that was aged in Scandinavian Aquavit barrels. This beer is a collaboration with CRUX Fermentation Project.

Purchased from the brewery in June 2024 and drunk in January 2025. Review no. 650!
This is the 2018 version of the beer.
L: Murky, muddy copper with a thin rim of bright-white head clinging to the edge of the glass. No carbonation. Honestly, this looks like a dirty toilet!
S: Big notes of oxidation, soy sauce, rich beef gravy, crushed bugs, and spices like pepper, dill and cumin. It's certainly not what I expected!
T: Since I mentioned dill above, now all I can taste is dill pickles... But if I try hard, I get burnt and caramelised beef, wood, booze, bitter toffee, black pepper and notes of aquavit. There's warmth and a bit of numbness on my tongue and warmth in my throat and stomach. The taste is the best part of the beer so far, but I don't get any notes of wheat, which I assume should be a thing with a wheatwine.
M: The body is smooth and unctuous, with minimal carbonation but more kick than expected on the swallow.
O: I'm not sure about this one. Reading the BJCP notes on Wheatwine and comparing it with what I have, I suspect my beer has picked up oxidative characters that have pushed it from the sweet, wheaty, honeyed notes that should have been there. But I could be totally wrong...
