My second bottle opened in this series (first being sherry). Have to say I do enjoy this one better. Poured with much less head, same Amber colour as sherry one. Taste is sweet with slight to little carbonation, tastes of plums. Still not blown away by this series, hoping the bourbon is better but don't plan to have my hopes up.

Really disappointing. The high alcohol content over rode the finish and leaves you with just a boozy taste in your mouth. Lacked malt backbone or hops for balance. Mouth feel was flat and a little thin. I couldn't finish the bottle.

Appearance - Pours a copper brown with a finger of off-white bubbly head.
Smell - caramel malts, plum, sweet notes from cognac barrel, earthy and leafy hops.
Taste - Bready caramalts followed by the plum and sweet notes from the barrel and a hint of the earthy and leafy hops finish off the brew.
Mouthfeel - Medium to full bodied with light carbonation. Finishes with a light sweetness.
Overall - The cognac flavours are well executed for this brew. Highly drinkable considering the ABV. I was hoping that the other flavours would shine through in this one.

500ml teardrop bottle poured into tulip 25/12/14 merry fucking Christmas
A clear brownish amber much like the other 2 from the barrel aged mixed pack, a few bubbles and a short lived finger of foam that leaves a few random patches of lace
S sour apple, soft caramel, cognac is hard to miss, purple candy, plum, orchard floor in the fall, leafy, herbal, pretty good nose
T less cognac, wet wood, lots of herbal tea, some booze but fairly tame for 10.6%, lacking intensity for a big barrel aged brew
M medium bodied, a little fizzy, slick on the palate, sour caramel apple finish with a little wood
O I think the base beer needs some work, I'm not seeing massive differences that I should between beers aged in barrels that couldn't be more different
nothing to be ashamed of but Big Rock hasn't really earned any new respect with this barrel aged mixed pack, I'd be lying if I said I was surprised

500ml teardrop shaped bottle, a sibling to the Sherry and Bourbon barrel aged versions.
This beer pours a clear, medium orange brick amber colour, with one finger of very loosely foamy, and mostly just broadly bubbly beige head, which leaves some spooky emaciated bat profile lace around the glass as it quickly blows off.
It smells of sweet, vinous red grapes, bready caramel malt, other pungent dark fruit - figs, raisins, dates, and a bit of dried cherry - a faint wet woody ashiness, and a prickly metallic alcohol measure. The taste is semi-sweet, grainy and bready caramel malt, mixed orchard fruit - some red wine grapes from the Cognac barrel, I presume, light dates, stale raisins, and a mildly tart cherry essence - some slightly acrid woodiness, and a soft earthy, leafy, and perfumed hoppiness.
The carbonation is fairly light on its feet, a bare frothiness all there is to it, the body medium-light in weight, and quite thin, though it is way smooth for something with this kind of lurking ABV. It finishes on the sweet side, the various fruit players sort of propping up the waning caramel backbone.
After having had two of this series now, I'm starting to really feel the itch of not knowing what the base beer is - sure, it would be easy to condemn it as Trad, but that just seems wrong. So here, the Cognac barrel actually does well to leave its brand (as in the heated metal type) on whatever it is underneath, as the boozy orchard fruitiness is kind of the only story here.
