Cheshire Cat DIPA has a big, malty backbone paired with citrus-like, pine forward Simcoe hops + tropical fruit notes of Trident hops... Both generously added into the whirlpool and dry hop. Bright amber in color, just the right amount of bitterness and a splash of juicy sweetness will have you grinning ear to ear.

First rating. I had a pint pour on draught at the brewery. It's a very attractive appearance: crystal clear, a pretty honey-amber color, with a full finger cap of fluffy, eggshell-color foam and thick swirls of lacing that persisted through the pour. For a draft pour it's lovely. The nose is modest; mostly sweet malts, lite citrus, and floral hops. The taste is right in my wheelhouse: malt-forward with notes of sweet caramel and earthy nuts but well-balanced by clean, sharp hop bitterness (88 IBU). I'm not familiar with Trident hops but they add the citrus and a slight tropical fruitiness. The Simcoe contributes notes of pine sap and woodsy soil. The result is well-balanced. This ale has a creamy mouth feel with pleasant carbonation, and it's substantial at 8.5% ABV. Overall, Cheshire Cat is a very good DIPA of the southern, malty, bitter genre. It's no fruit bomb. I'm glad to have tried it and will gladly drink it again if available.
