Our newest kettle soured beer was mashed with a mixture of German pilsner and wheat malts, inoculated with a Lactobacillus culture and allowed to develop acidity overnight in the kettle. Dry hopped liberally with New Zealand Rakau and US Apollo hops for fruity hops up front with a dry, tart finish.
