Pours a bright golden with very nice head retention. I have noticed that some of these Allagash wilds don't hold their head well, but this is distinctly different in that regard. Getting some apple, some English cheddar, and some mild funk. It definitely has some of the dry cider characteristics. It's slightly tart up front, but it's got some soft sour apple, a touch of oak. It's gentle and let's you admire it in full, rather than going overboard with the acidity. It's nicely balanced and composed. As I sip this, I have to say it's one of the best Allagash sours I've had.
