This wild ale began as our signature witbier and embarked upon divergent paths before blending together into this harmonious wild blend. We blended a portion of Chenin Blanc grape must into one portion of the beer while adding Cabernet Sauvignon grape must to another, barrel aging both for deeper flavor. A third portion was fermented with a classic Belgian yeast strain, aged in oak barrels, and blended into the mix. The finished beer is punctuated by notes of tart cherry, apricot, strawberry, and pie crust

Left out at RT over 30 minutes before cracking poured into a Spiegelau wheat beer glass. Got in a beer trade. No bottle date, consumed on 09/14/25.
A&S: rose-looking translucent beer. Very effervescent. Lots of carbonation, but no head. In the aroma, I am getting predominantly strawberries, but also grape must and white wine.
T&M: Super mellow, ABV well hidden. Fruity but not super sweet. Strawberries are also a big part of the taste. The barrel isn’t super present. Mouthfeel is champagne-like with the carobnation never settling. Light body.
Overall: it was good, but not mind-blowing
