Full ebony coloration (or lack thereof), reflecting zero light, with a lustrous helping of cocoa-tinged head atop, leaving lacey traces.
Aroma: Roasty, creamy, grassy. Chocolate-y pine cones, with a hint of espresso. Very nice.
In the mouth: Nicely hopped up front, then the malt takes over. In comes the richness, velvety smooth, getting bigger on the palate, alcohol on board. Everything's getting bigger, but it all stays smooth and palatable, with hop bitterness staying right on top. Big malt flavor never stays on the sweet side, it dries and keeps to that path.
This is pretty damned nice.

Black colored body, with medium brown back lit highlight. Big pillowy light tan head. Leaves behind some irregular rings of lacing.
Medium roast dark roasted malts. Has some black licorice and hops in the mix.
Has a "light" taste of slightly bitter dark roasted malts and floral hops. The malts include a coffee flavor, but the bitterness does not linger. Ends up with more of a creamy cocoa flavor.
Medium mouth feel, with a creamy texture. Very good carbonation.
This is a hopped stout that waylays the bitterness and allows for easy drinking. Hides the alcohol well.

Two of my favorite things on one label: simcoe & stout. I could almost feel my wallet levitating out of my pocket. 750ML bottle split with my wife, listed at 9% ABV on the brewery website.
The pour is black with a champagne-like head. There’s a bizarre mix of roast, minty freshness, & sweet malts coming up my nose. I don’t know what to do with that. So I’ll drink it.
Simcoe Imperial Stout is one weird dude. I can’t believe it was intended, but this thing has wintergreen mint tattooed all over it. Minty, minty, minty. I might not brush my teeth tonight. Mid-palate we find a brief echo of hoppy bitterness, mild roast, oh, who am I kidding. This is like a mint sandwich with a side of mint milk washed down with mint ice cream. A smaller snifter would have been perfect.
I like mint, but I like Simcoe more. As a Simcoe Imperial Stout it’s an abysmal failure since there’s no hint of Simcoe, but hey, I’ve now learned I don’t mind a decent mint stout. Pretty good brew.
