This 7% IPA showcases the interplay of Azacca and Cashmere — the former a big, bright fruit salad of mango, tropical fruit, and orange citrus; the latter presenting more subdued notes of melon and herbaceousness. These varietals, employed mightily in the dry-hop, are amplified by whirlpool additions of our beloved Citra.
Castle in Brooklyn’s grist combines UK pale malt, white wheat, flaked barley, and Murphy & Rude oats. We then ferment the beer with our House Ale #2 yeast, a London ale strain.
The final product is a soft, radiantly tropical IPA that we’ll gladly call home.

On tap at brewery:
Pale yellow-orange near-opaque body has a fairly dense finger of head that kept a film most the way down, curtains of lacing included.
Nose is citrus (mix of pulp, rind, and blossom) and a creamy oatmeal on the more easily discerned scents. Deeper whiffs bring a green peppery herbal notes with cilantro and something I can’t pinpoint though cucumber plants come to mind. Intriguing mix I am really enjoying trying and failing to describe.
Taste starts familiarly thanks to my over-analyzing the nose - though it starts with the more obvious notes. Citrus and oats, backed by green pepper and herbal notes, though lighter and less distinct than the nose. Feel is medium with carbonation that cuts through the middle of the softer edges. Moderately vegetable stalk bitterness in back.
Quite interesting makeup from Cashmere and Azacca, and I enjoyed the analysis as much as the beer.

Had on tap. Slightly hazy yellow with a white head. Great citrus and tropical hop aromas with decent hops. Taste is juicy with hints of wheat, simple and clean ipa. Feel is juicy, slightly hoppy and wheaty, and overall easy drinking but not crushable. All around good ipa

L: Poured from a tallboy can to a pint glass. Had a yellowish color and a cloudy consistency. There was a half inch of foamy, somewhat long-lasting head. Above average lacing.
S: A very good aroma of hops, citrus fruit, malt, tropical fruit, and wheat.
T: Tasted of a small amount of malt (mostly in the finish), a decent shot of tropical fruit (mango and passionfruit, specifically), light wheat notes (very fleeting), moderate hops (just enough to be interesting), and some citrus (orange). This is a focused, well-balanced, and easy to like flavor. It's a good mix of hoppy bitterness and fruity sweetness.
F: A good amount of carbonation with a sharp finish. Medium-bodied.
O: A rock solid IPA. Worth a look.

Pours a golden yellow hue, bright white head. A bouquet of clementine and mango melon on the nose. It's soft and inviting. It has some freshly squeezed orange juice flavors with a touch of tanginess that really masks the bitterness. This is a really nice IPA.
