Bliss Quest is a best bitter — a classic English pub ale defined by the harmonious balance of malt, hop, and yeast. But like January’s Hand in Glove and this summer’s Golden Years, Bliss Quest refracts its traditional British inspiration through American terroir.
We brewed this beautiful brown beverage with a base of Epiphany’s Foundation two-row barley, and introduced some further complexity with their biscuity Brewer’s Breakfast malt and a pinch of Murphy & Rude’s chocolate wheat. And, OK, fine, we may have cheated and also used one single bag of Fawcett’s pale crystal malt.
Bliss Quest received kettle additions of Sonnet. A new varietal for us, Sonnet is essentially East Kent Golding that’s grown in Oregon’s Willamette Valley. As with its UK counterpart, this hop is floral and herbal, but it picks up currents of citrus and honeysuckle from the Pacific Northwest soil. Those notes swirl with the malt bill to summon graham cracker, black tea, freshly baked biscuits, and a hint of strawberry jam.

This has a lovely clarity in its penny-like coloring, though the head fizzles slowly to nothing more than a thin ring. The beer has a slightly rich malt with some caramel mixed into the medium toast and a tea-like earthiness. The taste brings the toast more than the tea, which is partially replaced with a bit of minerality. The opening is pretty neutral, and the beer grows slightly more bitter into the finish (a bit of tea / earth, but faily neutral in flavor). Medium light in body with a moderate-minus carbonation level, the beer is pretty easy to taste without needing any recovery period between each sip.
