Poured from a 25oz bomber into a tulip glass. Appearance is golden brown and very transparent with one finger thick white head. Smell has a nice effervescent sourness blended well with peach, lemon, and wheat flavors. There is a nice yeast component as well. Taste follows the nose up front with a great fruited sour profile; however, the finish is somewhat muted in flavor. Sweetness is low to moderate, with very little bitterness. Mouthfeel is fairl light and effervescent with more body up front than on the finish (good amount of carbonation overall). It is very clean with maybe a slight hint of acetyl/vinegar that adds a slight bite.
Overall, this is an excellent barrel aged fruited sour with great peach flavor that complements the base beer instead of creating a fruit bomb. It is almost perfect up front but falls off a little for me towards the finish. I would recommend this beer to sour/Lambic fans as well as those wanting to get into sours as the acidity is held in check. I am excited to see how SBC develops over the next few years.
