Poured from 22oz waxed bomber into a tulip glass.
Appearance: very dark, rich brown hue, almost black. Head is a thin layer of frothy tan foam. Not bad!
Smell: plenty of woody, vanilla-ey bourbon aroma, mixed in with some complex dark-fruit character. I really like the mélange, although I am not getting anything in there I'd specifically identify as pecan.
Taste: lots of wood flavor in this one. The bourbon hits first, and then there's this interesting middle ground of lighter beer flavor and just wood -- perhaps there's some combination effect between the wood and the pecans there. Finish is a little astringent, perhaps a little sour even. I like it, and it's interesting, but it's probably not a stout I'd return to.
Mouthfeel: medium-light body with a decent carbonation and creaminess. I would have maybe expected a little more body in a 9% imperial stout.
Overall: I'm glad I gave this a try, but unless you really like bourbon stouts or the idea of pecans is appealing to you, I think this beer might have limited appeal.
